These notes exist because we think readers should know what our recommendations rest on. The short version is that we visit the way you would visit, pay what you would pay, and write only after we are confident we'd return.
We visit anonymously
Our editors book under names unrelated to the publication. We do not announce visits. Where staff or chefs recognise an editor — Bali is small — we say so in the review and weight the experience accordingly. We never ask for a table, a tour, or a "best of" set menu.
We pay every bill
Every bill is paid by the publication, at standard rates, on standard cards. We do not accept hosting, comped meals, press rates, "industry friend" pricing, or post-visit refunds. If a property insists on a gesture, we donate the equivalent and note the donation in our internal ledger.
We return before recommending
A single visit is enough to disqualify a room — kitchens fail in legible ways. It is not enough to recommend one. Any tier above Recommended requires a minimum of two visits, separated by at least a fortnight, taken by at least two different editors. Where we are unable to return — a kitchen closes, a chef changes — we say so in the review and adjust the tier downward.
Three verbal tiers, no numbers
We use three verbal tiers in place of star ratings and aggregate scores.
- Recommended — a room or table we would return to without hesitation.
- Highly Recommended — a room or table we would route a friend out of their way for.
- Essential — a small list. Rooms and tables whose absence would be felt across Southeast Asia.
Four axes, verbal not numeric
At the foot of each review you'll find four short verbal assessments. For restaurants: Cuisine, Service, Ambience, Value. For hotels and villas: Suite, Service, Setting, Value. We use words because numbers compress what is worth keeping uncompressed.
Money
The publication earns from paid annual "Featured Partner" listings. A property that holds a Featured Partner listing pays a flat annual fee to be listed and featured on The Slow Table; that arrangement is disclosed on every page where it appears. A paid listing has never moved an editorial tier or altered an assessment. Our editors visit anonymously, pay every bill themselves, and complete the written review before any commercial relationship is established or disclosed to the editorial team.
Corrections
Factual errors are corrected quickly and visibly, with a dated note appended at the foot of the review. Disagreements about taste are not corrections, and we will not pretend they are. Write to corrections@theslowtable.example.
