The Slow Table exists because we wanted a publication for the version of Bali we actually live in — quiet rooms, considered plates, the small handful of estates and tables worth recommending without flinching. We visit anonymously, pay our own bills, and return at least twice before publishing a tier above Recommended. Where we cannot return, we say so.
How we review
A short summary lives in the footer of every page; the long-form account is on the methodology page. The shape of it is straightforward. Editors book under names unrelated to the publication. Every bill is paid by us. Recommendations above the lowest tier require at least two visits by at least two editors. A Featured Partner listing has never moved a tier, and never will.
Our tiers
We use three verbal tiers in place of numerical ratings. Recommended means we would return. Highly Recommended means we would route a friend out of their way. Essential is reserved for the small number of rooms and tables on the island whose absence would be felt across Southeast Asia.
How we pay for this
The Slow Table reviews independently and pays its own way. When we assess a restaurant, a villa, or a hotel, we visit anonymously and settle our own bills — no free stays, no comped meals, no arrangement that could soften a judgment.
We fund the publication through Featured Partnerships: a small number of properties pay a flat annual fee to be featured here, and every one of them is disclosed, openly, wherever it appears. We carry no banner advertising.
A partnership pays for production and presence — never for a verdict. A Featured Partner is reviewed by exactly the same standard as anyone else, and our assessment says what we found. The placement is paid; the opinion is not for sale. That distinction is the foundation everything here is built on — and the reason a recommendation from The Slow Table is worth anything at all.
